Went to the gym this morning had a little chat with Mel. Not sure how it all came about but I said I would drop her a couple of Peranakan recipes hence this post.
Also realised that I haven't blogged about one of my favourites, Chicken Rendang Nyonya Style.
I took this shot when we were in Malaysia for the new restaurant menu.
Really easy to make. Ready? Here we go..
All of this chopped plus a teaspoon of Turmeric. Mainly for colouring. Use 5 shallots instead of red onion for better results.
Blend it all together. Add water so it blends nicely.
Heat oil in pot, add in rendang paste, stir for few mins.
Add chicken and potatoes.
Add 2 cups of water and let it simmer on medium heat for 30 mins.
Add coconut milk in the end and Bob's your uncle!
Serve with fluffly white rice.

is that ginger in the photo...top middle
dude. ginger is brown in colour.
that's galangal or lengkuas in malay. should be able to get it in chinese supermarket in the fridge section.
let me know how you get on.
wasnt sure...just wated to check was thinkin galangal but looked more like ginger if u ignore d colour lol
